Sourdough Blueberry Cobbler

A twist on a classic dessert, sourdough blueberry cobbler.

The light hint of sourdough, the sweetness of fresh blueberries, and a scoop of homemade ice cream create an exceptional dessert experience.

“10 out of 10” is how my daughter described the first bite of this cobbler!

Honestly, I’ve never been a huge cobbler fan.

But the more time I spend in the kitchen the more I enjoy new dishes, a fresh spin on a current recipe, or something completely from scratch.

And this sourdough blueberry cobbler did not disappoint!

So let’s get into it.

The sourdough flavor – The sourdough base adds complexity to the typical cobbler.

The cobbler crumble crust – Crisp on the outside while remaining chewy on the inside. The perfect textural contrast!

Healthier – Utilizing sourdough makes this dessert a bit more nutritious than conventional cobblers, as sourdough fermentation can increase nutrient availability and pre-digest gluten, making it easier to digest.

Having the right tools is essential to create a beautiful sourdough blueberry cobbler.

You will need mixing bowls, measuring cups and spoons, a silicon spatula, a pie dish, or a deep baking dish.

Step 1 Combine the blueberries, honey, vanilla, lemon juice, salt, and 2 tbsp of all-purpose flour in a bowl. Gently coat the blueberries in the mixture, careful not to smush them.

Step 2 Combine the 1 cup of all-purpose flour, rolled oats, cane sugar, brown sugar, salt, and baking powder in a bowl with a whisk.

Step 3 Add the sourdough starter and butter to the flour mixture. Mix well until all the ingredients are well combined.

Step 4 Pour the blueberry mixture into the pie dish.

Step 5 Use an ice cream or cookie dough scooper to scoop the sourdough cobbler mixture on top of the blueberry mixture in the pie dish. (It’s okay if there is space between the scoops of cobbler topping. The topping will spread while baking).

Step 6 Preheat the oven to 350 degrees.

Step 7 Bake for 50-60 mins.

Step 8 Remove from oven when done. Allow to cool for 10 minutes then serve!

Trying different fruit cobbler variations allows you to use other fruits based on what’s in season or readily available.

Let it Rest—Allow your cobbler to cool for at least 15 minutes before serving. This rest time helps set the filling while making it easier to slice and serve.

Whipped Cream – Add a dollop of freshly whipped cream on top to complement the cobbler’s warmth and sweetness.
