Sourdough Blueberry Cobbler

Ingredients
  

  • Blueberry Filling:
  • 5 cups fresh blueberries
  • 2 tsp. vanilla extract
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. all-purpose flour
  • 1/4 tsp. salt
  • Sourdough Cobbler Topping:
  • 1 cup all-purpose flour
  • 1/2 cup cane sugar
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1 1/2 tsp. baking powder
  • 1 cup sourdough starter
  • 8 tbsp. butter
  • 1/2 tsp. salt

Instructions
 

  • Step 1 Combine the blueberries, honey, vanilla, lemon juice, salt, and 2 tbsp of all-purpose flour in a bowl. Gently coat the blueberries in the mixture, careful not to smash them.
  • Step 2 Combine the 1 cup of all-purpose flour, rolled oats, cane sugar, brown sugar, salt, and baking powder in a bowl with a whisk.
  • Step 3 Add the sourdough starter and butter to the flour mixture. Mix well until all the ingredients are well combined.
  • Step 4 Pour the blueberry mixture into the pie dish.
  • Step 5 Use an ice cream or cookie dough scooper to scoop the sourdough cobbler mixture on top of the blueberry mixture in the pie dish. (It's okay if there is space between the scoops of cobbler topping. The topping will spread while baking).
  • Step 6 Preheat the oven to 350 degrees.
  • Step 7 Bake for 50-60 mins.
  • Step 8 Remove from oven when done. Allow to cool for 10 minutes then serve!
