There’s something truly special about the aroma of freshly baked apple pie wafting through the kitchen. This Apple pie recipe from scratch is a double-crust apple pie, a classic that will stand the test of time.
I’ve made this recipe with many different apple varieties and have always had amazing success.
The taste of the flaky crust enveloping a sweet and slightly spiced homemade apple filling, baked to golden perfection makes it hard not to go back for seconds (and thirds).
From a comforting family dessert to a social gathering, this homemade apple pie will fit the bill.
What I Love About this Apple Pie Recipe from Scratch
- The use of different apples will give you a slightly different flavor yet always delicious.
- The texture of the crust is perfect. Flaky, not wet, and too thin.
- The pie filling mixture is delicious as a stand-alone treat.
- You will have leftover pie crust dough that you can add on top of the pie or bake as pie crust cookies.
Tips for Making Homemade Apple Pie
- Make sure you allow yourself at least 1 hour of resting time for the pie crust to chill in the refrigerator.
- Green apples will result in a more tart apple pie.
- Make sure your butter and coconut oil are cold.
- A scoop of ice cream is the perfect addition to homemade apple pie.
Ingredients
Flaky Pie Crust Ingredients:
- 2/3 cup cold butter cut into cubed chunks
- 6 tbsp. cold coconut oil
- 2 2/3 cups all-purpose flour
- 1/2 tsp. salt (My favorite salts to use are Redmond’s Real Salt or Celtic Salt.)
- 8 tbsp. ice cold water
- Extra flour for dusting
Pie Filling Ingredients:
- 6 apples of your choice (for this recipe I used Granny Smith apples)
- 1 tbsp. freshly squeezed lemon juice
- 2 tbsp. softened butter at room temperature
- 1/4 cup brown sugar
- 1/8 tsp. cardamom
Pie Crust Coating Ingredients:
- 1 egg mixed with 2 tbsp. whole milk
- 1tbsp sugar mixed with 1/4 tsp. cinnamon
Tools You May Need for Baking the Apple Pie:
- Rolling pin
- Pastry brush
- Pie dish
- Plastic wrap
- Stand mixer or large mixing bowl
- (If you use a large mixing bowl instead of a stand mixer you will need a pastry cutter to cut the butter into the flour).
How to Make the Apple Pie Recipe from Scratch
Instructions for baking the pie crust:
- Combine the flour and salt in the stand mixer.
- Add in the cold butter and cold coconut oil.
- Mix on low until the butter and coconut oil forms crumb shapes as it mixes into the flour
- Pour in the ice water.
- Mix on low until the dough holds together and pull away from the sides of the bowl.
6. Once the dough is ready to shape, place it on a floured surface and divide the dough into 2 equal parts.
7. Shape each piece of dough into 2 discs.
8. Tightly wrap each disc with plastic wrap.
9. Place the dough in the refrigerator to chill for at least 1 hour. (The dough can chill for up to 24 hours)
Instructions for making the pie filling:
10. After the dough has chilled for at least 1 hour, you can begin to prepare the apple pie filling. Allow the dough to sit out for about 20 minutes to allow the dough to soften a bit.
11. Peel, core, and slice the apples then place the apples in a large bowl.
12. To the apples, add the lemon juice, butter, brown sugar, cinnamon, and cardamom.
13. Unwrap and roll out the first dough halve. It should be large enough to fit over your pie dish. There should be enough dough trim over the pie dish to cut and crimp later.
14. Pour the pie mixture into the pie crust.
14. Roll out the second half of the pie crust dough, making sure the dough is large enough to cover the top of the pie mixture and have enough dough to hang over the pie dish.
15. Trim the edges of the top and bottom pie crust as neat and even as possible. Set the edges aside.
16. Crimp the edges of the pie crust.
17. In a small bowl mix the egg and milk to create an egg wash. Using a pastry brush generously brush the top of the pie crust.
18. In another small bowl mix the sugar and cinnamon. Then use the pastry brush to brush the top of the pie crust lightly. Cut venting slits into the crust. *Optional (With the leftover pie edge scraps you can cut out shapes and add them to the top of the pie crust. This is a fun way to add additional flaky crust to your pie.)
19. Preheat oven to 400 degrees bake for 20 minutes.
20. Reduce oven to 350 degrees bake for 45 minutes.

You do not have to prebake any part of the pie crust before baking the pie.
