All you need is just a waffle maker, a few ingredients, and of course your sourdough starter.
Before your sourdough starter reaches full maturity, you can begin making waffles with just your sourdough discard.
WHAT’S SO GREAT ABOUT SOURDOUGH?
You could make waffles from scratch without using sourdough.
But opting to use a sourdough-based recipe for your waffles will make them a lot more healthier.
Cooking from scratch tends to make almost any meal healthier when it’s prepared at home.
And sourdough waffle batter is no exception.
- Sourdough is easy to digest.
The bacteria yeast in fermented sourdough breaks down the starches in the grains before they reach your stomach. This process is less work for your gut.
- Good acid and good bacteria are in sourdough.
Sourdough has higher amounts of lactic acid which is known as the good acid. Good bacteria is also produced in fermented sourdough which is good for the body.
- Sourdough has a lower glycemic index.
Because sourdough is fermented, it depletes the bad starches within it. This helps blood sugar not to rise in the same way it would with non-courdough products.
- There is less yeast in sourdough.
The healthy bacteria cause sourdough to use less yeast than traditional flour recipes.
- You don’t have to worry about toxic preservatives sourdough.
- Sourdough retains vitamins and nutrients.

WHAT ARE THE BEST OILS FOR SOURDOUGH BLUEBERRY WAFFLES?
Coconut oil is popular in many sourdough waffle recipes because it helps to make a much more crisp waffle.
Not to mention, coconut oil is one of the healthiest oils to cook with.
Lately, I’ve been enjoying Nutiva Nurture Vitality Squeezable Organic Coconut Oil.
The squeezable pouches are convenient and easy to use.
Using melted butter in the waffle batter recipe will give a more rich taste to the waffles.
I’ve also used a combination mixture of both coconut oil and butter.
My favorite brand of butter to use is Kerrygold.
WHAT MAKES BLUEBERRIES HEALTHY?
Blueberries are an antioxidant superfood.
Antioxidants work to protect your body from free radicals.
Blueberries contain Fiber, Vitamin C, Vitamin K, and Manganese.
These sweet little berries have also been linked to contributing to good heart health.
Consuming blueberries has also been shown to help reduce aging.
There are even studies that show blueberries may help prevent urinary tract infections.

TIPS FOR MAKING WAFFLES:
- Add blueberries to the waffle batter after you’ve poured the batter into the waffle maker.
- Try to keep your waffle maker sprayed or oiled in between each waffle (as needed) to help prevent blueberries and batter from sticking to the waffle maker.
- If you choose to add butter to waffles once complete you will only need a few drops since oil and/or butter was used in the recipe.
KITCHEN TOOLS:
- Waffle maker
- Mixing bowls
- Whisk or wooden spoon
- Large enough spoon, scooper, etc. to pour batter into the waffle maker.
HOW TO MAKE THE PERFECT SOURDOUGH BLUEBERRY WAFFLES
Preheat the waffle maker so that when done making the waffle batter you can immediately pour your waffle mix.
In a large mixing bowl combine 2 cups of sourdough starter. (make sure your starter has already been fed and fermented over-night)
Add 1/4 cup of flour and water combined. (this will help the waffles from tasting extremely sour)
Add 2 eggs, 1/2 teaspoon pink salt, 2 tablespoons of agave, 4 tablespoons of melted coconut oil and or butter combined.
Mix all the ingredients well with a whisk or large wooden spoon.
Add 1 teaspoon of baking soda to help thicken the waffle batter. (mix in well)
If needed, spray your waffle maker with oil to help prevent the waffle batter from sticking to the waffle maker.
Using your scooper or batter pourer, pour the necessary amount of waffle batter onto the waffle maker.
Drop in your desired amount of blueberries on top of the poured batter.
Close and open when your machine signals the waffle is done.
Repeat this process until you have used all the waffle batter adding in more or less blueberries for each waffle.
Sourdough Blueberry Waffles
Equipment
- Waffle Maker
Ingredients
- 2 cup of sourdough starter
- 1/4 cup of flour and water combined
- 2 eggs
- 1/2 tsp pink salt
- 2 tbsp agave you can also use honey if you prefer
- 4 tbsp melted coconut oil & butter combined
- 1 tsp baking soda
- Spray oil to keep the waffle batter from sticking to waffle maker if needed.
- 1 cup fresh or frozen blueberries
Instructions
- Preheat waffle maker to desired setting.
- In a large mixing bowl combine 1 3/4 cups of fed sourdough starter.
- Add in 1/4 cup of flour and water combined.
- Add in 2 eggs, 1/2 tsp pink salt, 2 tbsp agave, 4 tbsp melted coconut oil and or butter combined.
- Mix all the ingredients well with a large wooden spoon or whisk.
- Add in 1 tsp baking soda (mix in well)
- Using scooper or batter pourer begin pouring batter on hot waffle maker.
- Drop desired amount of blueberries into waffle batter.
- Close the waffle maker and cook until done.
- Repeat this process for each waffle.
Notes
- Making sure your sourdough has been fed for at least 24 hours will give your blueberry sourdough waffles the most added health benefits.
- If possible use organic blueberries
- If possible use fresh, farm, free-range eggs.
